Tomato "Garden" Salads

Last Summer (and early Fall,) the heirloom cherry tomatoes were bountiful at the farm where we get our weekly CSA produce share. Every week E and I could go pick a carton as part of our share. They had orange ones, yellow ones, oblong ones, and the regular red ones. Even a few "chocolate" ones that were a greenish red. Nom! So they've been a major feature on my salads for a while.

Tomato Blossoms
Mixed nuts, raisins, and dark chocolate trail mix; leftover roasted organic beet, golden beet, and sweet potato spirals; organic salad (red lettuce, carrots, tomatoes, hemp hearts, chia seeds, raisins, and rosemary vinaigrette.)
Monday, 7/29/13 - For this lunch, everything but the trail mix (and salad toppings) came from our CSA share.
The spiralized roasted veggies were sort of a bust. Super fun, but the taste didn't come out right. I don't really know what I'm doing there.

Blooming Tomatoes
Vegan peanut brittle, leftover collard hummus, GF garlic pretzels, organic salad (lettuce, kale, carrots,
tomatoes, hemp hearts, chia seeds, dried berries and raisins, and rosemary vinaigrette.)
Friday, 8/30/13 - The green hummus was a bust. It was really gross. I was following some recipe online for an alternative way to use collard greens. Barf. I ate it for a little while, as I had a big batch of it, but finally we just threw the rest out.

Tomato "Rock Garden"
Organic pluot and golden plum, organic apples, Mighty Maple peanut butter, organic salad
(lettuce, kale, carrots, tomatoes, hemp hearts, chia seeds, raisins, and rosemary vinaigrette.)
Friday, 9/6/13 - More local fresh CSA goodies. Plus some super yummy maple-flavored peanut butter. I'm a sucker for Peanut Butter and Co peanut butters!

Strawberry Fields
Organic cucumber w/salt, organic apples, Cinnamon Raisin Swirl PB, organic salad (red lettuce, kale,
strawberries, carrots, tomatoes, hemp hearts, chia seeds, raisins, and rosemary vinaigrette.)
Monday, 9/9/13 - Usually I save berries for the girls, as they're so expensive to get organic. But when they're in season, or when they start turning bad, Mama gets some too! Yum!

Spiralized
Hail Merry macaroons, leftover green cauliflower "popcorn," tamari almonds and The Good Bean roasted chickpeas, organic salad (lettuce, kale, carrots, tomatoes, hemp hearts, chia seeds, raisins, and rosemary vinaigrette.)
Thursday, 9/12/13 - Just a quickie lunch for Mama this time.
