Fire and Ice Salads - Part 2

Colorful "grown-up" salads for work or on-the-go!
 
With the new year coming up, are you resolving to eat healthier for yourself or your family? Pack lunches to save money or to better control what you're eating? Don't overwhelm yourself. Start small. Even packing just one meal a week is a great start! As you find your groove, you can cook more fresh meals, go meatless once in a while, or pack lunches more days per week.

It's amazing how beautiful and appetizing food can be just by adding natural colors. This past summer, organic heirloom cherry tomatoes and blueberries were plentiful each week in our farm share, so I took advantage to make my lunches yummy... and beautiful!


Red, White, and Blue
GF cornbread muffin, DF garlic dip, GF garlic pretzels, organic golden plum,
organic salad (red lettuce, cabbage, heirloom cherry tomatoes, blueberries, carrots,
raisins, sunflower and chia seeds, hemp hearts, dressing)
 
Friday, 8/9/13 - I like the star cups for dip like this, since I want more than fits in a mini cup, but if I use a regular round muffin cup, there isn't room for enough chips or pretzels to justify having that much dip! It's like a catch-22!


Willy-Nilly
GF crackers w/PB, organic pluot, Hail Merry Miracle Tart, organic salad (red lettuce, cabbage, cherry tomatoes, blueberries, carrots, sunflower and chia seeds, hemp hearts, raisins, dressing)
 
Tuesday, 8/13/13 - This lunch was hastily thrown together, so no time for artistic tomato arrangements. Wham, bam, thank you ma'am.


Blueberry Garden
Seasoned almonds, organic cucumber and carrots, hummus, organic salad (red lettuce, cabbage,
cherry tomatoes, blueberries, carrots, sunflower and chia seeds, hemp hearts, raisins, dressing)
 
Friday, 8/16/13 - The hummus was left over from a Starbucks Bistro Meal or something... I saved the little container to re-use for a disposable lunch in the future. Yay!


Nuts for Salad!
Chocolate-covered pistachio clusters, organic apples, peanut butter packet, organic salad (red lettuce, cabbage,
heirloom cherry tomatoes, blueberries, carrots, sunflower and chia seeds, hemp hearts, raisins, dressing)
 
Tuesday, 8/20/13 - Peanut Butter and Co had sent me a care package with an assortment of their products, so this packet was from that. Perfect for when I don't have enough room for peanut butter in the lunchbox, and too lazy to find and fill a small reusable container!


Blueberry "Soup"

Monday, 8/26/13 - The soda came from one of the monthly foodie boxes I tried, and the Enjoy Life Decadent Bar came free from them for me to review. Woop! This was a particularly tasty lunch!
