Crouching Salad, Hidden Bunny

Thursday, 5/23/13 - The organic farm we get our weekly CSA share at had bunches of rainbow radishes. They were too beautiful to waste in a soup! So I mommied-up and tolerated the peppery bite of them raw, which was totally worth getting to see this lovely rainbow while I ate.

 I had seen this technique used to make apple bunnies, so I figured it should work on radishes too. And they're so much cuter and rounder than apple slices!

Hidden Bunny Salad: organic red lettuce, cabbage, radicchio, micro greens, spinach, carrot scraps, Chioggia and golden beets, strawberries, rainbow radishes, sunflower and pumpkin seeds, raspberry vinaigrette 

For the beets, I used a flower veggie cutter to make flowers, and then saved the coins for even more beet-y goodness! And for the radish bunny, I cut the peel into ears, just like the tutorial at BentoForKidlet says to do with apples. Worked like a charm!

A very simple lunch, with no special tools required, really. And totally worth the little bit of extra effort.
